Lycopene and Prostate Cancer Prevention

Lycopene is a carotenoid pigment that gives vegetables and fruits such as tomatoes their bright red color. Consumption of lycopene has been connected to reduced risk of prostate cancer. Tomatoes are especially rich sources of lycopene; however, because the fruit is composed of a tightly bound fiber, cooking or processing tomato, releases these fibers and increases the uptake of lycopene by the body.
