Unsaturated fat
is usually derived from plant sources and tends to be
a liquid at room temperature. Diets that are higher
in unsaturated fat and lower in saturated
fat, such as in the Mediterranean diet which emphasizes
olive oil, may reduce one's risk of developing prostate
cancer. Unsaturated fat increases the
amount of "good" cholesterol (HDL) found in the blood
stream and higher consumption of unsaturated
fat as opposed to saturated fat has been linked
with better cardiovascular health.
